Each ingredient weight is then calculated from flour weight: ingredient = flour × ingredient percentage ÷ 100.
How the pizza dough calculation works
Pizza dough recipes are easiest to scale with baker's percentages. Flour is always treated as 100%, and water, salt, oil and yeast are measured as percentages of the flour weight.
Solve for the flour first
Flour = target dough ÷ (1 + water% ÷ 100 + salt% ÷ 100 + oil% ÷ 100 + yeast% ÷ 100)Once the flour weight is known, each other ingredient can be calculated from its baker's percentage. This keeps the recipe in the same proportions even when you make more or less dough.
Calculate each ingredient from flour
Flour acts as the reference amount for the whole recipe.
Flour is always 100%
Baker's percentage does not mean the ingredients add up to 100%. Flour is the reference, so flour is always 100% and everything else is compared with it.
Hydration means water compared with flour
A dough at 63% hydration contains 63 g of water for every 100 g of flour. Higher hydration generally means a wetter, softer dough.
Scaling does not change the ratios
Whether you make one pizza or twenty, the same percentages can be used. Only the ingredient weights change.

How to calculate your pizza dough by hand
The calculator automates these steps, but the same method can be followed with a normal calculator.
4 dough balls × 250 g = 1,000 g total dough.
100% flour + 63% water + 2.8% salt + 0% oil + 0.10% yeast = 165.90%.
165.90% ÷ 100 = 1.659.
1,000 g ÷ 1.659 ≈ 602.77 g flour.
Multiply the flour weight by each ingredient percentage.

The raw ingredient values are calculated before display rounding, so the recipe stays as close as possible to the target total.

Why the calculator uses grams
Dough formulas work best when ingredients are weighed. The calculator therefore uses grams as its internal calculation unit rather than cups, teaspoons or other volume measures.
Ingredient weight
Flour, water, salt, oil and yeast are all calculated as weights in grams. This gives one consistent basis for the whole formula.
Percentages are ratios
A baker's percentage is converted to a decimal before the calculation. For example, 63% becomes 0.63.
Display rounding comes last
The calculation can retain more precision internally, then show a practical number of decimal places for weighing ingredients.

Understanding your pizza dough result
The ingredient weights tell you how much dough to make, but the percentages also affect how the dough feels, handles and bakes. Use these reference notes to understand what the numbers mean and where the calculator's limits are.
Higher hydration
More water relative to flour usually makes the dough softer and stickier. It can support a more open, airy crumb, but may be harder to handle.
Lower hydration
Less water usually gives a firmer dough that is easier to roll or shape thin. Very low hydration is common in crisp or cracker-like styles.
More oil
Oil can make the crumb more tender and can help browning and crispness. Pan pizzas may also use extra oil around the dough rather than only inside it.
Yeast is time-sensitive
More yeast does not simply mean a better dough. The right amount depends heavily on how long and how warm the dough ferments.
What different hydration levels can feel like
Hydration is the weight of water compared with the weight of flour. These ranges are broad guides rather than strict style definitions.
Firm dough. Often easier to roll very thin and useful for cracker-like or richer dough styles.
Typical pizza-dough territory: manageable, stretchable and suitable for many thin or hand-stretched pizzas.
Softer and stickier dough that can produce a lighter interior, especially in pan pizzas.
Very wet dough. Common in highly aerated tray or focaccia-style formulas and usually requires gentler handling.

Errors that can change the dough
Most scaling problems come from mixing up percentages, weights or the role of the ingredients.
Adding percentages as parts of total dough
Baker's percentages are based on flour, not on the finished dough total. Flour stays at 100%.
Entering 0.63 instead of 63%
If the calculator asks for hydration as a percentage, enter 63 for 63%, not 0.63.
Using volume instead of weight
Cups and teaspoons are less consistent. Pizza dough scaling works best when the ingredients are weighed.
Treating the yeast preset as fixed
Yeast should usually be adjusted when fermentation time or temperature changes.
Forgetting pan oil
Detroit, Sicilian and focaccia-style pizzas may use substantial extra oil in the pan beyond the oil included in the dough formula.
Assuming high hydration is always better
More water can produce a lighter dough, but it can also make the dough much harder to handle and may not suit every flour or style.
Choosing a dough ball weight
Ball weight controls how much dough you have for each pizza. The right amount depends on pizza diameter, crust thickness and style.
Dough ball weights are not universal
These examples are useful starting points only. A thin pizza and a thick pan pizza of the same diameter can need very different amounts of dough.

Baker's percentages provide a convenient way to describe and scale dough formulas because flour remains the fixed 100% reference. A recipe can therefore be made larger or smaller without rewriting every ingredient ratio. The same approach is widely useful in bread, pizza and other dough calculations.
