Grams and ounces usually measure mass. Cups, millilitres and spoons measure volume. They are different types of measurement.

Cups → millilitres is usually volume → volume. Cups → grams is volume → mass, so the ingredient normally matters.
Ounces vs Fluid Ounces
oz normally refers to mass in a recipe. fl oz refers to volume. They should not be treated as the same unit.

Baker’s Percentage vs Ordinary Percentage

A 70% hydration dough does not mean 70% of the finished dough is water. It means the water weighs 70% as much as the flour.

Add all flour weights together before using baker’s percentage.
A scaled recipe can produce 0.5 egg. The maths is valid, but you may need to beat the egg and measure half.
Do not automatically double the cooking or baking time. Pan size, depth and cooking method can change the result.
Ingredient identity matters because different foods have different mass for the same volume.
A US customary cup and a metric cup should not be treated as identical when the selected standard matters.
Fan-oven guidance is practical cooking guidance, not a universal exact rule for every oven or recipe.

This is a mass-to-mass conversion, so the ingredient does not change the conversion factor.
Convert a Cup to Grams
What ingredient is in the cup?
A cup measures volume while grams measure mass. Different ingredients can have different masses for the same cup volume.
There is no single correct answer to “1 cup = how many grams?” without knowing the ingredient and the measurement standard being used.
Why 100 mL Does Not Always Mean 100 g
mL measures volume.
g measures mass.
Water can be close to a one-to-one numerical relationship under ordinary kitchen conditions, but oil, honey, flour and other ingredients differ.
Do not use 1 mL = 1 g as a universal kitchen rule. Choose the ingredient when converting between volume and mass.

A calculation can be mathematically correct but still be wrong for the recipe if the wrong unit, ingredient, serving size or oven setting was used. Check the meaning of the numbers before you use the result.
Mistakes to Avoid
Using the Wrong Flour Basis
In baker’s percentage, total flour is 100%. Do not calculate hydration from total dough weight, and do not forget extra flour types.
Scaling Only Some Ingredients
If a recipe scale factor is 1.5, every ingredient should be checked and scaled unless there is a clear recipe reason not to.
Scaling Cooking Time the Same Way
Doubling ingredients does not automatically mean doubling the cooking time. Pan size, food depth and cooking method also matter.
Mixing Grams and Millilitres
Grams measure mass. Millilitres measure volume. They are not automatically interchangeable.
